Whipped Goat Cheese with Pea Shoots

Pea shoots are trendy little things right now, and easy to incorporate in many dishes. We used them as a garnish here, but they have so much more to offer. They are great in other sandwiches and salads, too. You can also add them to stir fry. This is an easy appetizer to serve at your Mother’s Day celebration.

Ingredients

  • 5 ounces goat cheese, softened
  • 2 ounces cream cheese, softened

Instructions

Serves: 4 to 6 as an appetizer
Makes: ¾ cup whipped goat cheese

Preheat oven to 350 degrees. Brush crostini with olive oil. Season with salt and freshly cracked black pepper. Bake for 10 minutes or until slightly brown and crisp. Set aside.
In the bottom of a stand mixer add goat cheese and cream cheese. Using the whisk attachment, whisk on high until light and fluffy, about 1-2 minutes. Add in 1/2 tablespoon olive oil, minced garlic salt and black pepper. Whip another 30 seconds. Spread goat cheese mixture on top of each crostini and top with three to four pea sprouts each. Lightly sprinkle platter with the rest of the olive oil.
